Green Cake!

Our friends were having a Thai party. I decided to try a steamed cake with pandan essence. The bottom layer is a rice mixture with pandan essence. The top layer is eggs and pandan essence. Pandan essence is a natural sweetener made from screwpine leaves. As it steams you're supposed to smooth the top of the eggs. However, the window for doing this is very small. I missed it, which is why the cake ended up looking like green brains! Fortunately, it was tasty. We cut it into squares so that it didn't look so brainy.

I liked it, and since I have pandan essence that I need to use up, it seemed like a good way to do that!
